Pillowy, Handmade, and Made for October: The Story Behind Spizzico’s Gnocchi

There’s a moment that happens at almost every table when someone tries our gnocchi for the first time. They take a bite, pause, and look up. It’s softer than they expected. Lighter, too. And it tastes like something made by hand, because it is.

At Spizzico Italian Kitchen in Arnold, our potato gnocchi is made from scratch using our own Neapolitan family recipe. It’s one of the dishes that connects us most directly to where we come from: Monte di Procida, a small seaside town just outside Naples. As October evenings turn cool on the Broadneck Peninsula, there’s no better time to get to know it.

What Exactly Is Gnocchi?

Gnocchi (pronounced NYOH-kee) are small Italian dumplings. The name is thought to come from old Italian words for a knot in wood or a knuckle, which fits their small, rounded shape.

Italians have been making dumplings for centuries, using flour, bread, semolina, and whatever else the kitchen had on hand. Potato gnocchi came later, after potatoes arrived from the Americas and slowly worked their way into Italian farms and kitchens. Today, potato gnocchi is the version most people picture, and for good reason. Nothing else gives you that same tender, pillowy bite.

The ingredient list is short: cooked potatoes, flour, a pinch of salt, and sometimes egg. That simplicity is exactly what makes gnocchi so revealing. With so few ingredients, there’s nowhere to hide. Technique is everything.

Why Handmade Makes All the Difference

Making fresh gnocchi well is harder than it looks. Add too much flour and the dumplings turn dense and chewy. Add too little and they fall apart the moment they hit boiling water. The potatoes need to be cooked and riced while still warm, and the dough needs to be handled gently and quickly. Work it too long and you lose the lightness that makes gnocchi special.

This is the kind of knowledge that gets passed down in a family kitchen, not learned from a package. Shelf-stable gnocchi from the grocery store can be convenient, but it rarely has the delicate texture of the real thing. When gnocchi is made fresh, each piece cooks up soft and tender, ready to soak up whatever sauce it’s tossed in.

That’s why we make ours the way our families did back home: by hand, from scratch, with care.

A Taste of Campania

The region around Naples, called Campania, has its own famous take on the dish: gnocchi alla sorrentina, named for the town of Sorrento just across the bay. It’s gnocchi baked with tomato sauce, fresh mozzarella, and basil until the cheese melts and bubbles. Simple, comforting, and unmistakably southern Italian.

If you’ve ordered our Gnocchi Caprese, with oven-roasted tomato sauce and fresh mozzarella, you’ve tasted that same spirit. It’s a little piece of the Bay of Naples, served right here in Arnold.

Here’s another fun tradition: in Rome, there’s an old saying, giovedì gnocchi, meaning “Thursday is gnocchi day.” Families would enjoy a hearty plate of gnocchi on Thursday before the lighter meals that traditionally came on Friday. We think that’s a custom worth borrowing. Your Thursday night dinner plans? Consider them settled.

Six Ways to Enjoy Our Gnocchi

We serve our fresh handmade gnocchi six different ways, so there’s something for every craving:

  • Caprese: Oven-roasted tomato sauce and fresh mozzarella. Our nod to Sorrento and a great place to start.
  • Tradizionali: Tomato sauce, grated parmigiano, and fresh basil. Classic, simple, and perfect for letting the gnocchi shine.
  • Meat Sauce: Our slow-cooked meat sauce, rich and hearty. Made for chilly fall nights.
  • Casarecci: Meatballs, fresh mozzarella, and crumbled sausage sauce. The most filling option on the list and a true “homestyle” plate.
  • Gorgonzola: A creamy gorgonzola cheese sauce with a gentle, tangy richness. A favorite for cheese lovers.
  • Pesto: Tossed in a creamy pesto sauce. Bright and herby, with a little taste of summer that carries into fall.

Why Gnocchi Belongs on Your Fall Table

As we shared last month in our post on why autumn is prime season for hearty Italian cooking, cooler weather changes what we crave. Gnocchi fits the season perfectly. It’s warm and satisfying without feeling heavy, and its soft texture makes every sauce taste even richer.

Want to round out the meal? Pair your gnocchi with a crisp Caesar or our Spinach Salad with apples, walnuts, and blue cheese crumbles, which tastes like autumn in a bowl. Add an order of Polpette, our housemade meatballs with crostini, to share at the table, and you have a full Italian dinner without lifting a finger.

Come Hungry, or Take It Home

Whether you’re stopping in for a cozy dinner, picking up carryout after a long day, or feeding a houseful of family, our gnocchi travels well and is always made with the same care. You can order online for pickup, browse our full main menu, or check out our catering menu for your next gathering.

We’re open every day except Tuesday at 1282 Bay Dale Drive in Arnold. Stop by this October and taste the recipe that came with us all the way from Monte di Procida.
